DinuguanDinuguan (Pork Blood Stew), is a Filipino dish made from the blood, entrails, and meat of a pig. Usually mixed with choice hot spices and coconut milk. Black in appearance when served. The name "dinuguan" is derived from the Filipino word "dugo", literally blood.
Recipe for Dinuguan (Pork Blood Stew)(AKA Chocolate Meat)
Ingredients
- 3 cups cubed boneless pork butt with fat (1/2-inch cubes)
- 3 tablespoons lard or peanut oil
- 1/2 cup vinegar mixed with 1 cup water and 1 tablespoon salt
- 1 medium yellow onion, peeled and sliced
- 1 1/2 cups pork blood (from Vietnamese, Filipino or Western European markets; It is often frozen and worth the search).
- 3 cloves garlic, peeled and crushed
- 2 hot jalapeno peppers, seeded and chopped
Directions
Place the pork in a 4-quart covered stove-top casserole and add the vinegar mixture. Bring to a boil and reduce the heat. Cook, covered, until the pork is tender, about 1 hour. Watch that it does not dry out at all. You will need to add a little more water. Heat a frying pan and add the lard or oil. Saute the onion and garlic until the onion is clear. Add the oil, garlic, and onion to the boiled pork and continue cooking for 5 minutes. Puree the pork blood in a food processor. Add the blood to the pork little by little, stirring the mixture while adding, and bring to a boil. Add the chopped pepper and simmer uncovered to reduce the sauce for a few minutes more. Keep covered and serve hot. This is most often served over rice or puto (sweet steamed rice muffins).

El 1969, un cop acabat el servei militar a Mallorca, es casa amb Maria-Antònia Oliver. El 1972 publica 'De mica en mica s’omple la pica', un dels grans best-sellers catalans, amb uns 200.000 exemplars venuts des de llavors.
Acabat el franquisme es funda l’Associació d'Escriptors en Llengua Catalana (AELC), de la qual n’és un dels fundadors i integrant de la Comissió Gestora. Més endavant n’esdevindrà secretari (1978) i president (1995-1998).
A banda d'escriptor de novel·la polÃciaca, també excel·leix com a traductor, rebent el premi CrÃtica Serra d'Or de traducció de novel·la (1989).
El 1993 és guardonat amb el premi Narrativa Ramon Llull per 'El Jardà de les palmeres', obra que tanca la trilogia d’espasa i bruixeria iniciada per 'L’illa de les Tres Taronges' (1983). El desembre d'aquell mateix any serà escollit Escriptor del mes.
Mor el dissabte 31 de gener de 1998, a l’edat de 52 anys, a causa d’un cà ncer de pulmó detectat tot just aquell Nadal.
