Food combiningFood combining is the term for a nutritional approach that focuses less upon the quantity and kind of food consumed, and more upon the timing of their consumption. For example, advocates sometimes recommend that carbohydrates and citrus fruits should not be consumed at the same meal, because the enzyme that digests carbohydrates (ptyalin) can only function in an alkaline environment. Another example is the Montignac Method, advocated by Michel Montignac, which recommends against eating fats with carbohydrates, because the carbohydrates cause insulin to be released by the pancreas, which in turn leads to the body tissue absorbing the fats. Some well-known celebrity advocates include Suzanne Somers and Marilu Henner.
While some of the assumptions used to justify food combining are not controversial, their application can be. Advocates point out that although omnivores adapted enzymes which allowed them to be able to use several different food sources, the ability to eat multiple different kinds of food within an hour is an extremely recent occurrence, postdating the development of cities, so the human body was not designed to eat food in this way.
However, there is currently little evidence supporting real-world success for these theories, and the approach remains controversial. In some ways, food combining can be seen as a reaction to criticism of Low-carbohydrate diets, in that it urges caution in the consumption of carbohydrates, while allowing a more balanced daily diet.
